A JOURNEY ROOTED IN CRAFTSMANSHIP
Born in Toulouse, France, Nicolas Rouzaud’s passion for patisserie began in his family orchard, inspired by seasonal fruits and natural ingredients.
His grandfather, a master silversmith, passed down a deep respect for craftsmanship and precision. Trained by the prestigious Compagnons du Devoir, Nicolas completed a traditional Tour de France, mastering the techniques and heritage of French baking.

LUXURY AND REFINEMENT
Nicolas Rouzaud refined his craft during seven years at Le Bristol Paris, working under three-Michelin-starred Chef Eric Frechon and the late Laurent Jeannin, where he embraced the precision of luxury gastronomy. In 2014, he became Head Pastry Chef at The Lanesborough, before joining The Connaught in 2017 and opening The Connaught Pâtisserie in 2020. In 2025, he launches Nicolas Rouzaud Maison de Haute Pâtisserie—a distinctive new chapter where his signature innovation and craftsmanship reach new heights in the world of haute pâtisserie.
